Pumpkin Chocolate Chunk Cookies

I want to share one of my favorite fall recipes that my mom always makes during this time of the year. 
These cookies scream fall to me & my husband (or my son) can't get enough of them this year!


They are delicious, light & fluffy cookies.



Pumpkin Chocolate Chip Cookies
1 cup sugar
1/2 cup vegetable oil
1 egg
1 cup canned pumpkin
1 tsp. milk
1 tsp. vanilla extract
1 tsp cinnamon
2 cups flour
2 tsp. baking powder
1 tsp. baking soda
1 cup semi-sweet chocolate chips

Heat overnto 375. Mix oil & sugar. Blend in egg, pumpkin, milk and vanilla.
Add dry ingredients. Stir in chocolate chips.  Drop by tablespoonful on greased cookie sheet. 
Bake for 10-12 minutes.

White Chocolate Oatmeal Crasin Cookies


    Ingredients:
  • 1 1/2 c. brown sugar
  • 1 c. butter (softened)
  • 2 c. oats
  • 1 tsp. vanilla extract
  • 1 egg
  • 1 1/2 c. flour
  • 1/4 tsp. salt
  • 1 tsp. baking soda
  • 1 c. white chocolate chips
  • 1/2 c. Crasins

Preheat oven to 350 degrees.  Cream together brown sugar & butter until light & fluffy.  Add in vanilla & egg.  Stir in flour, baking soda, salt & oats.
Fold in chocolate chips and Crasins.
Drop by tablespoonful onto lightly greased cookie sheet 2 inches apart.
Bake 9-11 minutes or until edges are light brown.

Pumpkin Marshmallow Pops

This festive treat is as easy as can be! Assemble ingredients:
(for the orange color, you can buy orange melting chips, or just color your white chocolate)

 Melt chocolate, dip sticks and push into marshmallows. (just like cake pops, for stability)
Then dip, sprinkle, and let dry!

YUM!

I love hitting up Target after a big holiday to get some sweet deals.
This year I went after Easter, & among other things snatched up a doughnut pan. (Always wanted one.)
I made some the other morning & while they don't taste like fried doughnuts...these are a teensy bit healthier, more filling & stinkin' delicious!


I used this recipe for the batter & tossed them in powdered sugar & cinnamon sugar.
*for the cinnamon sugar, I used some cooled melted butter lightly brushed on, then tossed in ziploc bag*

Deliciously Delish!

Pinterest has become my go-to source for recipes.  
So many yummy ideas for dinners, treats, and snacks. Here is my most recent endeavor:


I followed her recipe and am in love!  I doubled the recipe, because both my husband and I love to snack.  
So easy, and a lot cheaper than Chewy bars.  Here's my tip: make sure you press everything firmly.
To store mine, I wrapped each individual bar in wax paper and twisted the ends.

slowly but surely

I am trying to ease back into posting, to hopefully get up to semi-daily posts.

If you don't know, I LOVE to bake. Cook? Not so much. I am decent at it, don't get me wrong, but I don't always enjoy trying to hold a baby and make a good, delicious meal every night. But thanks to Pinterest I have found some delicious new recipes and have been trying them out.
Last night, we had yummy chicken salad sandwiches, which I adapted from this recipe here.
I sort of just threw together what I had on hand from the recipe; corn, green onions, black beans, cilantro & corn chips. Rather than balance it on an avocado, I sliced it up and threw it right in, added the dressing then put it on some sandwich rolls. (YUM!) As my husband said, "I like how the avocado is subtle, but you can still taste it." As do I, husband....as do I!
